Avocado oil is rich in omega 9, particularly oleic acid, helping to protect the cardiovascular system by reducing blood pressure and lowering LDL cholesterol (“bad cholesterol”).

This oil also has a high concentration of vitamin E and carotenoids, which gives it strong antioxidant properties and would allow it to better prevent diseases such as AMD and cataracts.

It is also an excellent choice as a cooking oil because it remains stable, even at very high temperatures. During cooking, vegetable oils begin to oxidize from a certain temperature (called the smoke point), becoming denatured and releasing fumes, potentially harmful to health. Avocado oil, especially refined oil, is the most stable of all, which makes it particularly suitable for frying or cooking at high temperatures.

. The production of avocado oil

The production of one liter of oil requires an average of 30 to 45 avocados. At the start of the process, the whole fruit is ground into a paste. The paste then undergoes an oil extraction process. Then come the stages of refining, control and bottling.

Extra virgin avocado oil retains more authentic flavor and nutrients. It has a lower smoke point than refined avocado oil, making it better for low-heat cooking or dressing salads.

Refined avocado oil, on the other hand, still retains the good fats of avocados, has a more neutral flavor and a higher smoke point, making it suitable for high-heat cooking methods like frying. It also has a longer shelf life than extra virgin avocado oil.

According to FAO data, Mexico is today the main production and export area for avocados, with around 30% of the world’s cultivated areas. Next come the other South American countries, Indonesia and Kenya. Less important, cultivated areas in the Mediterranean countries (Israel, Morocco, Spain) are experiencing strong growth, driven in particular by the increase in consumption in Europe.
